Spiced Rice Pudding

A South Asian twist on a family favorite, this semi-sweet treat marries unexpected notes of spice to a toothsome, fruity dessert.

Preparation Instructions

  1. Microwave rice as directed
  2. In a small saucepan, warm 2 oz. of coconut milk on low heat
  3. Add almonds to warm milk to soften
  4. Remove almonds from heat
  5. Fluff rice in mixing bowl, stirring in almonds
  6. Add cinnamon, cardamon and cumin rice, season to taste
  7. Add raisins and craisins to rice, stirring in ~ 2 oz. of cold coconut milk
  8. Cover rice and chill
